Karn Studio transforms Acropolis corner building into gluten-free eatery

Olyn transforms the ground floor of an existing corner building in Athens’ Acropolis district into a 100 per cent gluten-free eatery and bakehouse, with Karn Studio taking a careful approach that builds on the character of the existing space. The design embraces the building’s most distinctive features, including its curved corner, high ceilings and generous openings onto the street. Large operable façades open the interior to the city, creating a direct connection with the neighborhood and allowing the everyday activity of the café to spill naturally onto the pavement. Inside, a sculptural terracotta-plastered counter anchors the space. Its rounded form echoes the curve of the building itself while guiding movement through the interior and encouraging interaction between customers and staff. Around it, a simple palette of terracotta floors, lime-washed walls, muted olive timber and metal details creates a warm, contemporary atmosphere inspired by Mediterranean architecture. Exposed services have been left visible, reflecting the building’s ongoing evolution. Beyond its material palette, the project is shaped by its purpose. Designed as a fully gluten-free environment, Olyn has been carefully planned to eliminate the risk of cross-contamination. The production areas, service functions and customer circulation all work together to support this requirement while maintaining an open, welcoming and transparent space. Karn Studio focuses on what was already there, by working with the building’s existing qualities. The project creates a calm, inviting place that feels closely connected to both its neighborhood and the everyday rituals of eating, gathering and hospitality.
